Apapa Food

We have lots of Nigerian food we prepare with beans legumes (phaselous), we have the bean cake which is popularly called akara, bean pudding which we called moi moi, bean soup which we called gbegiri and lots of it. Bean in the Yoruba tribe is called ewa, we have ewa and dodo, ewa agoyi, ewa oloyin etc. 9ja groceries and recipes tells of food we eat in Nigeria that are not common. Today we shall be discussing one special food by the Egbera tribe of Nigeria called Apapa.


The Egbera people are located at the North Central of the six geographical political region of Nigeria. It is located at Kogi state and well know to the state. One of there favorite dish of the people is Apapa and I am willing to explain how it is made.

The Apapa dish is also prepared with beans (EWA), it is prepared as though one is about to prepare beans pudding (moi moi) with a little twick to it. The Apapa dish is prepared by soaking beans in water without pilling off the skin. When it swells a little, one would add pepper and onion and blend it. After blinding it, the beans in molten state is would now be garnished with salt, seasoning and other ingredients to taste. The most important substance one would add to the molten beans is allium common called kanwon. This is what would make the Apapa swollen than the usual moi moi. The Apapa is now put in a leave covering or nylon bag and placed a pot of water to boil. The Apapa must be placed in a big pot with water to cover the Apapa to let it expand in the pot. When the pudding is ready, one could choose to serve it with pap, bread or other things used to take moi moi.
