Beetroot, Goat Cheese & Walnut Salad

Ingredients:


- For the Salad:

  - 2 medium-sized beetroots (raw or pre-cooked)

  - 100g (about 3.5 oz) goat cheese, crumbled

  - 1 cup walnuts, roughly chopped

  - 4 cups mixed salad greens (e.g., arugula, spinach, or mesclun)

  - 1 small red onion, thinly sliced

  - Salt and black pepper, to taste

  - 3 tablespoons extra virgin olive oil

  - 1 teaspoon honey or maple syrup (optional)

Instructions:



1. Prepare the Beetroots:

   - If using raw beetroots, wash them thoroughly and trim the tops and tails. You can roast or boil them. To roast, wrap each beetroot in foil and place them in a preheated oven at 200°C (400°F) for about 45-60 minutes until tender. For boiling, place them in a pot of water and cook for about 30-40 minutes until fork-tender. Allow to cool, then peel and slice them into wedges or cubes.

   - If using pre-cooked beetroot, simply slice it into wedges or cubes.


2. Toast the Walnuts:

   - In a dry skillet over medium heat, toast the walnuts for about 5-7 minutes, stirring frequently, until they are golden and fragrant. Be careful not to burn them. Set aside to cool.


3. Make the Dressing:

   - In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and black pepper until well combined.


4. Assemble the Salad:

   - In a large salad bowl, combine the mixed salad greens, sliced beetroots, red onion, and toasted walnuts.

   - Drizzle the dressing over the salad and toss gently to combine. Adjust seasoning with more salt and pepper if needed.


5. Add Goat Cheese:
