Warm Lentil and Herb Salad

This Warm Lentil and Herb Salad is a hearty, nutritious dish packed with protein-rich lentils and fresh herbs. It’s the perfect blend of earthy flavors and fresh tang, making it an ideal side dish or a light main meal. Serve it warm to highlight the full depth of flavors.



Ingredients:


- 1 cup dried green or brown lentils (or 2 cups cooked lentils)

- 3 cups water or vegetable broth (for cooking lentils)

- 1 small red onion, finely chopped

- 1 garlic clove, minced

- 1/2 cup fresh parsley, chopped

- 1/4 cup fresh mint or cilantro, chopped

- 2 tablespoons fresh dill, chopped (optional)

- 1/4 cup crumbled feta cheese (optional)

- 2 tablespoons olive oil

- 1 tablespoon red wine vinegar or lemon juice

- 1 teaspoon Dijon mustard

- Salt and black pepper, to taste


Instructions:



1. Cook the Lentils:

   - Rinse the lentils thoroughly under cold water. Place them in a saucepan with 3 cups of water or vegetable broth.

   - Bring to a boil, then reduce the heat to a simmer. Cook for about 20-25 minutes or until the lentils are tender but still firm. Drain and set aside.


2. Prepare the Dressing:

   - In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), Dijon mustard, salt, and pepper. Adjust seasoning to taste.


3. Sauté the Onion and Garlic:

   - In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped red onion and garlic, sautéing for 3-4 minutes until softened and fragrant.


4. Assemble the Salad:

   - Add the cooked lentils to the skillet with the sautéed onions and garlic. Stir to combine and warm the lentils for 2-3 minutes.


5. Add Herbs and Dressing:

   - Remove the skillet from the heat and stir in the fresh parsley, mint (or cilantro), and dill (if using). Pour the prepared dressing over the lentils and toss to coat evenly.


6. Serve:

   - Transfer the warm lentil salad to a serving bowl. Top with crumbled feta cheese (if using) and garnish with additional herbs if desired.

   - Serve immediately while still warm.


Tips:

- Lentil Type: Green or brown lentils work best for this salad, as they hold their shape when cooked. Avoid using red lentils, as they tend to become mushy.
