Poor Man's Prime Rib Recipe

Poor Man's Prime Rib is a flavorful and budget-friendly alternative to traditional prime rib, using more affordable cuts of beef while still delivering a rich, delicious taste. This recipe allows you to enjoy a tender, juicy beef dish without breaking the bank, perfect for special occasions or family dinners.

Ingredients:

- 2-3 pounds of beef chuck roast or bottom round roast

- 2 tablespoons olive oil

- 3-4 cloves garlic, minced

- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

- 1 tablespoon salt

- 1 teaspoon black pepper

- 1 teaspoon onion powder

- 1 teaspoon smoked paprika (optional, for extra flavor)

- 1 cup beef broth or red wine (for basting)

- Optional: vegetables for roasting (carrots, potatoes, onions)

Instructions:

1. Prepare the Roast: Preheat your oven to 325°F (163°C). Pat the beef roast dry with paper towels to help it brown properly.

2. Make the Seasoning Mix: In a small bowl, combine the minced garlic, rosemary, thyme, salt, black pepper, onion powder, and smoked paprika. Add olive oil to create a paste.

3. Season the Roast: Rub the seasoning mixture all over the beef roast, making sure to cover all sides evenly. Let the roast sit at room temperature for about 30 minutes to allow the flavors to penetrate.

4. Sear the Roast: In a large oven-safe skillet or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. This step adds depth of flavor to the final dish.

5. Add Broth or Wine: Once the roast is browned, add the beef broth or red wine to the pan. If using, place any chopped vegetables around the roast at this point.

6. Roast in the Oven: Cover the skillet or Dutch oven with a lid or aluminum foil and transfer it to the preheated oven. Roast for about 2-3 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 145°F for medium).

7. Baste Occasionally: If you want to add extra flavor and moisture, baste the roast with the pan juices every 30 minutes during cooking.

8. Rest the Roast: Once the roast is done, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a more tender roast.

9. Serve: Slice the roast into thick pieces and serve with the roasted vegetables and pan juices. You can also serve it with mashed potatoes or a side salad.

Tips:

- Choose Your Cut Wisely: While chuck roast is the most common choice for this recipe, you can also use a bottom round roast or other affordable cuts that have good marbling.

- Slow Cooker Option: You can also prepare this dish in a slow cooker. Simply follow the seasoning and searing steps, then transfer everything to the slow cooker and cook on low for 6-8 hours.

- Leftover Uses: Any leftovers can be used in sandwiches, tacos, or added to soups for a delicious meal the next day.

This Poor Man's Prime Rib recipe delivers tender, juicy beef that feels indulgent without the high price tag. Enjoy a delicious meal with family and friends!
