Seared Butterfield Sardine Recipe

Seared Butterfield Sardines are a delicious and healthy seafood dish that highlights the rich flavors of sardines, enhanced with simple seasonings. Butterfield sardines are typically prepared by searing them to achieve a crispy exterior while keeping the interior tender and flavorful. - 1 can of Butterfield sardines in olive oil (or fresh sardines, if available)

- 2 tablespoons olive oil (for cooking)

- 1 tablespoon butter

- 2 cloves garlic, minced

- Salt and black pepper, to taste

- Juice of 1 lemon

- Fresh parsley, chopped (for garnish)

- Optional: red pepper flakes (for heat)


Instructions:



1. Prepare the Sardines: If using canned sardines, drain them and set aside. If using fresh sardines, clean and gut them if not already done. Pat them dry with a paper towel to remove excess moisture.


2. Heat the Pan: In a large skillet, heat the olive oil and butter over medium-high heat. Allow the butter to melt and bubble slightly.


3. Sear the Sardines: Add the sardines to the pan, skin-side down (if using fresh sardines). Sear for about 3-4 minutes without moving them to develop a crispy skin. If using canned sardines, sear for about 1-2 minutes on each side just to heat through and slightly crisp the exterior.


4. Add Garlic: Add the minced garlic to the pan during the last minute of cooking, stirring gently to prevent burning. 


5. Season: Season the sardines with salt, black pepper, and optional red pepper flakes for added heat. Squeeze fresh lemon juice over the sardines just before removing them from the pan.


6. Serve: Transfer the seared sardines to a serving platter. Drizzle with the pan juices and garnish with chopped fresh parsley.
